Some are better than others, based on the ingredients and processing methods.
So which one should you choose?
Follow this guide to find out everything you need to know about selecting the best dark chocolate. What Is Dark Chocolate? Dark chocolate is produced by adding fat and sugar to cocoa. It differs from milk chocolate in that it contains little to no milk solids.
It
also goes by other common names, including bittersweet and semisweet
chocolate. These differ slightly in sugar content, but can be used
interchangeably in cooking and baking.
Usually the simplest way to
know if your chocolate is "dark" or not is to select one with a 70
percent or higher total cocoa content.
Dark chocolate is well known for its powerful antioxidant
activity. In fact, it has been shown to have a greater antioxidant
effect than many high-antioxidant fruits like blueberries and acai
berries (1, 2).
Observational studies have also linked eating dark chocolate with a reduced risk of heart disease and improved brain function (3, 4, 5, 6, 7). Bottom Line:
Dark chocolate is a mixture of cocoa, fat and sugar. It is rich in
antioxidants and may provide health benefits for the heart and brain. Ingredients to Look For
It is best to choose dark chocolate made with as few ingredients as possible.
The best dark chocolate always has chocolate liquor or cocoa
listed as the first ingredient. There may be several forms of cocoa
listed, such as cocoa powder, cocoa nibs and cocoa butter. All of these
are acceptable additions to dark chocolate.
Sometimes other
ingredients are added to dark chocolate to improve its appearance,
flavor and shelf life. Some of these ingredients are harmless, while
others can have a negative impact on the overall quality of the
chocolate. Sugar
Sugar is often added to dark chocolate to balance its bitter taste.
While sugar is an important component of dark chocolate, some brands go overboard.
It is rare to find dark chocolate that doesn't have added sugar. A rule of thumb is to choose a brand that does not have sugar listed first on the ingredients list.
Better yet, choose one that lists sugar last.
Note that the higher the cocoa percentage, the lower the sugar content will be. Lecithin
Lecithin
is an optional ingredient in dark chocolate. It's added to many
store-bought chocolates as an emulsifier. It keeps the cocoa and cocoa
butter from separating and helps blend flavors.
It is commonly
derived from soybeans, so you may see it listed as soy lecithin on the
label. Soy lecithin is used in such small amounts in chocolate that it
shouldn't pose any concerns about health effects or quality.
When you're selecting a brand, keep in mind that lecithin isn't absolutely necessary to make chocolate. Milk
High-quality dark chocolate shouldn't have any milk added to it.
The only exception would be milk fat. This is essentially butter that has had its moisture and non-fat solids removed.
Chocolate makers sometimes add milk fat to dark chocolate to soften it and add flavor.
Just like lecithin, milk fat is not required to make dark chocolate. Flavorings
Dark chocolate is often flavored with spices, extracts and oils to improve its taste.
The most common flavoring you will see in dark chocolate is vanilla.
Unfortunately, it is difficult to differentiate on a food label which flavors are natural and which are artificial.
If you want flavored dark chocolate, choose one that is organic. That way you can be sure the flavors are not artificial. Trans Fat
If you come across dark chocolate that contains trans fat, avoid it. Trans fat consumption is a significant risk factor for heart disease (8, 9, 10).
Although
it's becoming less common to add trans fat to chocolate, manufacturers
sometimes add it to improve shelf life and consistency.
To make
sure your chocolate doesn't include trans fat, check the ingredients
list. If hydrogenated or partially hydrogenated oil is present, that
means the bar contains trans fat. Bottom Line: Only a few ingredients are required to make dark chocolate. Avoid brands made with trans fats or large amounts of sugar. The Optimal Cocoa Percentage
Dark
chocolate brands have a wide range of cocoa percentages, which can be
confusing. When you're choosing dark chocolate, look for bars that have a
cocoa content of 70 percent or higher.
Higher-percentage dark
chocolate contains a higher concentration of antioxidants and nutrients
compared to chocolate with a lower cocoa percentage (1).
Consuming
chocolate with a higher cocoa content is associated with several health
benefits, such as improved heart health and brain function (1, 11).
Chocolate with a higher cocoa percentage also tends to be lower in sugar. Bottom Line:
The healthiest dark chocolate contains a cocoa percentage of 70 percent
or higher, which provides more antioxidants and health benefits. Avoid Alkalized or Dutched Dark Chocolate Dutching is a chocolate processing method that involves treatment with alkali, otherwise known as alkalization.
This method is used to change the color of the chocolate and reduce the bitter flavor.
However,
several research studies have demonstrated that Dutching significantly
reduces the amount of antioxidants in chocolate (12, 13).
For this reason, chocolate that has been Dutched should be avoided.
To
check whether chocolate has been Dutched, check the ingredients list
for something along the lines of "cocoa processed with alkali." Bottom Line: A process called alkalization, also known as Dutching, has negative effects on the antioxidants in dark chocolate. Choose Fair-Trade and Organic Chocolate
Choose chocolate made from fair-trade and organic cacao beans whenever possible.
Growing and harvesting cacao beans is a difficult process for the producers.
According to Fair Trade USA, you can ensure the cacao bean farmer earns a fair price for the product by buying fair-trade chocolate.
Choosing organic chocolate may also reduce your exposure to any artificial chemicals or pesticides sprayed on the coffee beans. Bottom Line: Fair-trade and organic chocolate supports cacao farmers and reduces your exposure to pesticides and artificial chemicals. A Few Brands to Try
Here are a few high-quality dark chocolate brands for you to check out. Alter Eco Alter Eco chocolate is fair-trade and organic. They have many types of dark chocolate bars to choose from.
The
richest chocolate you can get from them is their Dark Blackout bar,
which is 85 percent cocoa. It only contains 6 grams of sugar and four
ingredients: cacao beans, cocoa butter, raw cane sugar and vanilla
beans. Pascha Chocolate Pascha Chocolate
makes chocolate in an allergen-free facility, so their products are
free from common food allergens such as soy, dairy and wheat.
They have a variety of dark chocolate bars that contain up to 85 percent cocoa.
Their
commitment to making high-quality chocolate is impressive. They take
pride in using only essential ingredients to make their products, such

Could wild mangoes solve the world's chocolate crisis?

Theobroma, the genus to which cacao, or "cocoa" a" we know it, belongs, translates from the Latin
as "food of the gods." Ask any serious chocoholic and they would agree
that this is an apt name to be used in relation to the sweet treat that
many worldwide enjoy.
Much to the dismay of said chocolate lovers, there has been a decline in the availability of cocoa recently, putting the global chocolate supply at risk. The trees on which cocoa pods grow have suffered due to a combination of factors,
including crop failure, disease and aging plantations, which has led to
price fluctuations and a shortfall in supply. Global demand for the
ingredient has been growing meanwhile, leading industry experts to warn
there could be a chocolate deficit of 1 million tons by 2020.
What to do? Use of a substitute ingredient would work, but they are very rarely accepted happily by consumers.
The industry is still seeking an alternative, however, as experts
confirm that chocolate as it is known and loved now could turn into a much sweeter confectionery.
But rather than bulking bars up with sweet nougat or raisins in place
of cocoa butter – the key component currently used – there is another
way.
Cocoa butter is the pure butter extracted from cocoa beans and is one
of the unique natural fats highly demanded by the food industry, as
well as for use in pharmaceuticals and cosmetics. It is currently the
only commercially available natural fat which is rich in saturated and
mono-unsaturated fatty acids. There are some alternatives available
based on lauric and myristic acid – but these have both been shown to increase blood cholesterol.
The price of cocoa butter is one of the highest among all tropical
fats and oils and, according to International Cocoa Organization, its cost more than doubled
between 2005 and 2015. Finding an alternative that will satisfy the
world's sweet tooth is not an easy task, but we may just have found the
answer: wild mango. The unknown mango
Wild mango is something of a "Cinderella" species, the potential of
which is as yet unrealized. The fruit is a mainstay in the lives of
rural Bangladeshis in the hill forest areas of the country, where it is
extensively used in pickles and chutneys, for food and for medicines.
However, it is not farmed in any formal sense and remains a wild
species, sporadically collected throughout the year.
Our research has found that this fruit could provide an alternative to the much coveted cocoa butter,
plucking it from the branches of obscurity into mainstream production.
The analyses we conducted showed that wild mango butter, made from the
fruit's stone, has a very similar chemical, physical and thermal profile
to cocoa butter – as well as several superior properties. It has a
higher solid triglyceride content, for example, which means it can be
used to improve soft cocoa butters, and make a temperature-resistant
hard chocolate. It has the added advantage of being a fruit with a
large kernel – typically 40 to 50 percent of its body mass – meaning it
has a proportionately high fat content: 9 to 14 percent.
Additionally, the color of the mango butter is same as cocoa butter –
and the melting point is also very close, which is of great importance
for maintaining chocolate production processes and reducing some of the
cost.
Though, unfortunately, our funding did not allow us to make a bar of
scrumptious chocolate with the mango alternative, the science is all
there – and cultivating the wild mango may have extra benefits for
society and the environment too. Wild mango can be found growing in
Bangladesh, India, Nepal, Myanmar, China, Thailand and Cambodia.
However, the species is declining at an alarming rate due to logging,
shifting cultivation and very few conservation efforts. There is an
enormous potential for the development of a wild mango enterprise, which
the food and cosmetic industries could make use of together. plant called pataxte, mentioned in Maya Popol Vuh, after I posted my writing
about as a 'real white chocolate' that can be a solid milk substitute with its
own butter like its relative cacao. Although it may be hard to
believe, we appear to be the first in the world to have made 'whole bean cacao
honey bars' that don't require cocoa butter or powder as conventional sugar
chocolate bars do whether they be a Hershey's bar or the best Belgian
chocolate.So we are indeed in a league of our own whereas
Chocomuseo,Fernandos,Ixcacao,Chocola,Chocolarte,etc, that have come along since
2006 when only a chocolatier named Ismael had a conventional
but high quality chocolate specialties shop named Chocotenengo,(now in
Washington,D.C.?) and used to send us costumers if they wanted cacao beans or
something different.As far as I can tell we can probably make our cacao honey
using only best ingredients(,i.e.- Guatemalan cacao beans and
honey),cheaper than imported cocoa powder and cocoa butter bars are made but in
terms of quality our whole bean cacao honey is in a class by itself and
imported cocoa powder cocoa butter and sugar bars that everyone one else in
Antigua and world use is mediocre and plastic. We were the first to roast
coffee in a shop in Antigua in 1993 and in fact during all my time in the SF
Bay Area around I never had seen anybody roasting in public as it was all done
some place else then brought to shops to be sold.Now everyone and their mother
in Antigua has copied us but incorrectly of course with super small vey high
temperature roasting that's not good for coffee and particularly for cacao roasting.In
fact we seem to have been world pioneers and innovators in roasting both
cacao and coffee in one business as well as being inventors of whole bean cacao

Well when i first discovered American Fidelity Life Insurance
it was when I was walking through the mall with my wife and one of the
salesmen had a booth set up and asked me to have a look at this program
he was offering that would especially benefit a soldier.
He explained to me that by joining the insurance I would be putting
forth 150.00 a month and making gaining 6% interest. That within 10
years I would have over 90,000 dollars to withdraw from.
After about 6 months I checked the account and only 180.00 was available
to be withdrawn. I went to the mall but that represenative was no
longer working there and a new suit told me that I was only going to
make around 16,000 dollars in 10 years. I guess that I didnt read the
small print when i signed the contract and took the man's word.
Just a warning to any soldiers or civilians out there that find
themselves talking to one of these represenatives. If you're looking to
put some money away i recommend a general savings account with a decent
interest rate.

to Guatemala. Not only did they move to one of the most impoverished
countries in the world in hopes of finding solutions to the endless
cycle of poverty; but they also did so with very little financial
support. They gave up everything, holding onto the idea that if Christ
was right in saying that the kindgom belonged to those with no earthly
possessions, then maybe they should be spending their time with these
people in hopes of discovering and enriching this kingdom. They truly
demonstrated what most of us are afraid to do; step out into the unknown
of reckless faith.
Flash forward five years, to the present
day. The organization my parents established in Guatemala, Global
Community Works, is still alive and well. Through five years of hard
work, people's support, and God's grace, the organization owns a coffee
shop in Antigua and has been involved in numerous community development
intitiates throughout all of Guatemala. But here is when it gets tricky
for people who have not been part of a non-profit or missionary
organization. Even when there is starting to be success in GCWorks,
most of the profit always goes back to the people that the organization
is focused on helping. Thus, the people that have started the
organization do not receive many financial benefits until many years
down the road. Ultimately, this is a true act of faith. An act of
faith that prevents my family from affording trips back to the United
States. If I've counted correctly, I believe that in the past five
years, my family has come back to visit three times.
Some of
you might think that this would be easy, I mean, if you live far away
you might see your family twice a year for the holidays or vacations.
In my dad's case, he will be lucky if he gets to go visit his family in
Maine every other year for Christmas. This year was supposed to be the
year for him to go see his family. But once again, like last year, my
family cannot financially afford to travel back to the states. This
would be a difficult year again but I have been trying to work out a way
to go visit them halfway in Mexico. This Christmas would just be an
interesting one with my direct family, in a warm place. Then we
received the bad news: my grandmother has been diagnosed Stage 2 breast
cancer. She will be having surgery this next week to hopefully rid her
body of the disease. With a recent history of health problems, this
could turn out to be a more dangerous surgery than normal for my
grandmother. As most of you know, cancer can also spread so
unexpectedly, leaving the future in doubt for her health.
So,
without my family's permission, I am asking for direct help. I am
asking for $3,500 to help my parents, sisters, and brother fly from
Guatemala and Arkansas to Maine for Christmas. This will cover plane
tickets (around $2,500) and expenses for the rest of the trip ($1000 for
food, rental car, possible lodging). I hope to have this money raised
within the next two weeks in order for the plane tickets to still be
reasonably priced for the holiday travel. Please help out my family
that has sacrificed so much for other families' in the third world
country of Guatemala. It would mean so much to me to spend time with my
family and for my dad to be with his mom in this time of difficulty.

AKA Arnold A. Chacon has been rumored to be everything from a transexual
imposter, to a serial pervert and worse, to a member of NAMBLA (North
American Man Boy Love Association), to a convicted felon, to a roll

rumors are unfortunate even if proven not precisely or completely
true. That is no different than his stories.
He/She slanders with the rough and unhewn skills of a second rate
tabloid journalist, without regard to who he/she harms, and certainly
without resort to facts. He/She should be working with The New York
Times. He/She isn't worthy of a good glass of piss, but no one ever
gets to tell him/her to his/her face, because, surprise, surprise,
he/she is never seen.
I know many would love to have very rough conversation (look up this
in a dictionary) with him/her over about a week, or a month, but it
would be a waste of time in any event. Besides, it would be too much
fun, very undisciplined.
Someday in the future, his/her veil will be ripped away, and the enemy
predators can feed on his/her liver. That would be more fun than a
barrel of monkeys to watch. The clock ticks every moment on this dirt
bag's very existence.

'Who's Bud Burrell?' and Other Questions Richard Altomare Won't Answer
Altomare is suddenly speechless on naked shorting
Naked shorting poster child Universal Express is a prime example of how corporate executives use stock market conspiracy theories to cover up their own sleaziness and, sometimes, criminality. Just take a look at the court documents on the company's web site, and particularly the latest filing -- a fascinating deposition by CEO Richard Altomare on Nov. 27.
You really should read through that deposition -- it is a hoot. It reads like something out of a Kefauver Committee hearing on organized crime in the early fifties, with Altomare refusing to answer most of the questions posed by the court-appointed receiver, Jane Moscowitz, on Fifth Amendment grounds.
While I'm sure that prosecutors will be most interested in persistent questions by Moscowitz implying that Altomare looted the company, my favorite was this:
Q. Did you ever seek to have any records analyzed that would determine whether, in fact, there had been naked short selling of the stock of Universal Express, Inc.?
A. I respectfully decline to answer that question based upon my constitutional rights as guaranteed to me by the 5th Amendment of the United States Constitution and the same rights provided to me in the Constitution of the State of Florida.
Q. In fact, you don't really know whether there has been any naked short selling of the shares of Universal Express, do you?
A. I respectfully decline to answer that question based upon my constitutional rights as guaranteed to me by the 5th Amendment of the United States Constitution and the same rights provided to me in the Constitution of the State of Florida.
Q. It's merely been a convenient thing that you could tell shareholders while their shares went down to an amount that I don't even know how to express what point .00001 is?

So in other words, a CEO who had once been a leading troubadour of the Baloney Brigade anti-naked-shorting movement -- he has a prominent role in Wall Street Versus America -- is now not only clamming up on the subject, but says that talking about it may incriminate himin a criminal act. In what criminal act, I wonder. Lying to shareholders, perhaps?
It will be interesting to see how Patrick Byrne, who has made similar claims about naked shorting and stock market conspiracies, will fare when his chance comes to provide a deposition to the SEC, which is investigating him and Overstock.com on a variety of things. Naked shorting claims are mentioned in the subpoenas, according to Overstock SEC filings.
As I suggested (see update to this item) some weeks ago, Moscowitz also bore down on Altomare about his links to the crackpot Bud Burrell, a penny stock operator and regular on the now almost-defunct "thesanitycheck" stock market conspiracy website. The result was more stonewalling:

Burrell has already said publicly that he was on the payroll and was a "significant" unsecured creditor, and also made vague threats against no one in particular that, if I were Ms. Moscowitz, I would take seriously.
Altomare can run from these questions, but he can't hide. The company is under FBI investigation, and Moscowitz indicated that still more subpoenas are flying.
She's particularly interested in jewelry purchases for Altomare at corporate expense, which Altomare--in one of the few questions he did answer--lamely claimed had come from "salary" directly sent to the jewelers.

Ive been following your blog and have been particularly amused by your postings about Patrick Byrne, Overstock.com and the mysterious people behind the anti-naked shorting movement.
Ive spent quite a bitof time tracking a vast network of corrupt executives, financiers and brokers who route discounted shares of obscure U.S. companies overseas through sham private placements and venture capital deals and then resell them to foreign investors at marked up prices, through unlicensed securities boiler rooms
A few weeks ago, I learned that shares of one such company, Private Trading Systems Inc. of Scottsdale, Ariz. (Pink sheets: PVTM), were being offered to European investors by an apparently fictitious brokerage calling itself Anglo Swiss Consulting (fictitious in the sense that it is not registered with any nations regulatory agency and that its Internet site is something of a Potemkin storefront.)
When I looked into Private Trading Systems, I noted that its chairman, chief executive, treasurer and corporate secretary is none other than C. Austin Bud Burrell, whose dire warnings about naked shorting have been featured at NCANS.net, on the Bob OBrien blog and similar Internet sites.
Burrell also has been a litigation consultant for John OQuinn, the Texas lawyer representing Overstock.com in its suit against Rocker Partners, Gradient Analytics and other defendants who allegedly undermined the companys stock through nefarious shorting activities.
Its worth noting that shares of Endovasc Inc., another company that is part of the anti-naked shorting coalition, also were sold by a foreign boiler room known asBellador Advisory Services.
Theres another interesting aspect to Private Trading Systems. According to the Form 10-12 that Private Trading filed earlier this month with the SEC, its biggest shareholder, with a 43.2 percent equity stake, is T.P. Ramsden.
The filing said Ramsden controlled the rights to the technology behind the trading system that the company is developing to allow institutional investors to privately trade securities, instruments, or any financial asset that is capable of being converted to electronic form.
What Private Trading Systems SEC filing did not say is that T.P. Ramsden isTerry Ramsden, once a highflying British bond trader, who pleaded guilty to investment fraud in the 1990s and later was convicted of bankruptcy fraud. He was sentenced to 21 months in prison, and served 10.
Ramsden is making a comeback of sorts, and has raised eyebrows in British investment circles by taking positions in several small public companies whose shares have moved upward after his arrival (Hansard Group is one example).
I offer this tale as yet another example of the kinds of activities that members of the anti-naked shorting coalition have been engaging in, while claiming that it is their detractors who are involved in dishonest undertakings.

The Company announces that a winding up order was made on 17 December 2008 against its subsidiary company The Private Treaty Market Limited ("PTML").
The Company is not affected by the winding up of PTML in relation to its activities in connection with the development and trading of insurance products. The Company retains the rights to the patent applied for relating to instantaneous settlement against delivery of electronic instruments. The benefits of the fee sharing agreement between the Company and DeMatco Inc. signed on 24 September, 2008 are expected to arise in the first half of 2009.
The Company will now finalise its accounts for the period ended 31 March, 2008 and interims for the period 30 September 2008 and will publish the accounts in the near future.

May 13 (Bloomberg) -- The founding partner of a London law firm will be fined 400,000 pounds ($591,000) for aiding a multimillion-pound illegal share scam, Britain’s Financial Services Authority said today in a statement.
Andrew Greystock, a former investment banker at NM Rothschild & Sons Ltd. and senior partner of Atlantic Law LLP, will also be banned by the FSA from working in financial services for signing off on advertising from four Spanish firms that were boiler rooms, the FSA said. Around 130 British consumers lost a total of 3 million pounds in the scam, according to the regulator.
“Firms and individuals that assist boiler room operators should be brought to task,” said Margaret Cole, the FSA’s enforcement director. “It will send a strong message of deterrence to other firms and individuals that may be tempted to turn a blind eye to the legitimacy of their clients in exchange for fees or commission.”
The U.K. has been trying to crack down on boiler rooms, which defraud Britons out of at least 200 million pounds a year, according to FSA data. Boiler rooms are illegal brokerages, often based overseas and beyond the reach of the regulators, which target investors with high-pressure sales pitches to buy risky and typically worthless shares.
The FSA is able to levy the penalty after Greystock lost a legal challenge at a London tribunal. Greystock wasn’t immediately available to comment.
Fox Hayes, a century-old law firm now in administration, had to pay a 954,770-pound fine last year in a separate case after the FSA found it approved promotions linked to a $21 million share scam.
